1 roll of rectangular puff pastry
400 g minced meat, beef, mixed meat or pork
1/2 yellow onion, finely chopped
2 garlic cloves, finely chopped or pressed
1 tsp dried oregano
1/2 tsp paprika powder
1/2 tsk salt
1/4 tsp black pepper
150 g grated cheese, such as mozzarella, cheddar or gouda
1 egg, beaten for brushing
For the topping:
A little extra grated cheese
Fresh parsley or chives, optional
Optionally:
1 tbsp tomato paste
1/2 tsp chili flakes
1 tbsp chopped parsley in the filling
Sesame seeds on top
Do this:
- Preheat the oven to 190 degrees. Place baking paper on a baking sheet.
- Heat a frying pan over medium heat.
- Add the minced meat and fry until it changes color and begins to crumble.
- Add the onion and garlic. Fry for a few minutes until the onion softens.
- Season with oregano, paprika, salt and black pepper. Feel free to stir in tomato paste if you want a richer flavor.
- Let the minced meat mixture cool slightly. It is important that the filling is not too hot when you add it to the puff pastry, otherwise the dough may become soft and difficult to roll.
- Roll out the puff pastry on baking paper.
- Spread the minced meat filling evenly over the puff pastry, but leave about 1–2 cm of free edge all around.
- Sprinkle the grated cheese over the minced meat.
- Roll the puff pastry from the long side into a tight roll.
- Gently press the edge together so that the roll stays closed.
- Place the roll with the seam down on the plate.
- Brush the top with beaten egg.
- Feel free to sprinkle some extra cheese or sesame seeds on top.
- Cut a few small slits in the top to allow steam to escape.
- Bake in the middle of the oven for about 30–35 minutes, or until the puff pastry is golden, crispy and cooked through.
- Let the roll rest for 5 minutes before cutting it into pieces.
- Top with fresh parsley or chives if you like.
Serving tips
Serve the puff pastry roll warm with a simple salad, cucumber, tomatoes and a cold garlic sauce. It also goes well with tzatziki, yogurt sauce, chili sauce or a mild tomato sauce.
As a main course, you can serve it with roasted potatoes, coleslaw or a fresh green salad. As a snack, you can cut the roll into smaller pieces and place on a plate.
It is also good for a lunchbox, but the puff pastry is at its crispiest when heated in the oven or air fryer.
