If you want to make it a simple lunch, you can serve the cauliflower with hummus, boiled egg, quinoa or a yogurt sauce with lemon and herbs.
Variations
With lemon and herbs
Squeeze over lemon and top with extra parsley, dill or basil for a fresher taste.
With chili
Add chili flakes or cayenne pepper if you want a little heat.
With breadcrumbs
Mix the cauliflower with breadcrumbs before roasting for extra crispy edges.
With cheesy topping
Sprinkle more parmesan, pecorino or grated aged cheese during the last 5 minutes in the oven.
With tahini sauce
Serve the roasted cauliflower with tahini, lemon and a little garlic for a more savory and nutty flavor.
Storage
Store leftovers in a tightly sealed jar in the refrigerator. Roasted cauliflower usually keeps for about 2–3 days.
Heat it preferably in the oven or airfryer to get some of the toasted surface back. Microwave also works, but the cauliflower will be softer.
Freezing is not recommended if you want to maintain the consistency, as cauliflower can become watery after thawing.
